7 Great Cookie Recipes ...

Who doesn’t love a cookie? Crispy or soft, homemade or bought we all have our favourites. There’s something very comforting about cookies and milk at bedtime after a rough day or an illicit bite of that chocolate chip crisp when you’re meant to be dieting. Even though they are relatively easy to bake at home, few women make their own but maybe these 7 great cookie recipes will tempt you into a creative session in the kitchen.

1 Basic Recipe for Double Chocolate Cookies

Ingredients are ½ cup soft unsalted butter, ½ cup caster sugar, 2 tablespoons condensed milk, ½ cup sifted self –rising flour, sifted ¼ cup cocoa, and 4oz plain or white chocolate cut into chunks.

Preheat the oven to 150°C, fan 130°C, gas mark 2. Using an electric mixer, cream the butter and sugar together until pale and fluffy. Beat in the condensed milk then add the flour, cocoa and a pinch of salt. Mix then stir in the chocolate chunks. Roll mixture into 12 walnut size balls and space at least 2 ½ inches apart on greased baking sheets. Flatten slightly and gently with the back of a spoon. Bake for about 25 minutes until cookies are firm at the edges but still soft in the middle. Leave cookies to cool on sheet for a couple of minutes then transfer to a wire rack.

2 White Chocolate and Cranberry

Omit the cocoa and increase the flour content by ⅓ cup. Add 40g of dried cranberries with the white chocolate chunks.

3 Maple Syrup Pecan

Replace the condensed milk with maple syrup . Omit the cocoa and increase the flour content by ⅓ cup. Finely chop ½ cup pecan halves and add these instead of the chocolate chunks. You also need 12 pecan halves to put in the centre of each cookie before baking.

4 Zingy Ginger and Lemon

Omit the cocoa and increase the flour content by ⅓ cup. Add 2 teaspoons of ground ginger with the flour. Forget the chocolate and add ⅓ cup chopped crystallized ginger. To finish off, whisk ⅓ cup confectioner’s sugar with 1 tablespoon lemon juice to a paste and drizzle across these great cookies.

5 Oats and Honey

Use just 1 tablespoon of condensed milk and add 1 tablespoon of clear honey as well. Increase the quantity of flour by ⅓ cup and omit the cocoa and chocolate. Add ¼ cup rolled oats with the flour. Before baking drizzle these great cookies with a little more honey and a sprinkling of oats. These take slightly less time to cook than the others so check after they’ve been in the oven for 20 minutes.

6 Toffee Fudge Chunk

Use dark brown sugar instead of caster sugar. Omit the cocoa and increase the flour content by ⅓ cup. Replace the chocolate chunks with 2oz fudge. Before baking finely chop an additional 2oz fudge and sprinkle on to the flattened cookies. After baked cookies have cooled, melt 8oz chocolate and dip each one halfway. Allow to set.

7 Cherry and Flaked Almond

Omit the cocoa and increase the flour content by ⅓ cup. Replace the chocolate chunks with ⅓ cup glace cherries. Before baking these great cookies, sprinkle each with a few flaked almonds.

So you can see how easy these great cookie recipes are. There’s no excuse to not make any. There’s no need to wait until the school bake sale or a special occasion, take an hour out and fill the house with yummy baking smells on a Sunday morning or for when the school bus empties.
