Easy Meals to Make can be real lifesavers. I know they've saved me a time or three hundred – when I'm all stressed out, have approximately two million things to do and not nearly enough time to do them, feel stressed, at wit's end, and simply do not want to be stuck making dinner for my beloved Better Half. What really sucks is that I love to cook for the BH, I love to have a delicious meal waiting at home because I know it's not fun to deal with phone calls, irate customers, annoying colleagues, awful bosses, and Boston rush hour, either. That's when easy meals to make save my sanity and our relationship. If you ever find yourself in your predicament, not only do I sympathize, but I dedicate this list of delicious yet easy meals to make to you!

1. Hurry up Chicken Pot Pie
at foodnetwork.com
Can you imagine making pot pie in only 40 minutes? There are plenty of easy meals to make that take far less time than you would expect! Because I love a piping hot, scrumptiously savory pot pie in the winter and because I adore Paula Deen to bits and pieces, I had to include this. Cook your chicken ahead of time if you like, stick to instant biscuit mix, and just make sure you have milk – it's that easy!
2. Herb Crusted Pork Loin with Asparagus
at kitchendaily.com
I adore asparagus, and pork loin is one of my favorite things to make. I promise you, this is an excellent recipe. Now, with prep time and cook time, this takes 55 minutes, but prop is only 15, so you'll really only be cooking for 40 – and since the loin goes in the oven, you don't really have to bother with it. What could be better?

3. Grilled Cajun Salmon
at simpleanddelicious.com
This is proof that you can find plenty of easy meals to make that are healthy, too. Salmon is so good for you, and fish is easy to cook – this only takes about 15 minutes! It's wonderful, too, and you only have to deal with four ingredients, so it's absolutely zero hassle. And no, don't worry – you can substitute with an indoor grill, or just give it a twist by baking it on a rack, with a pan under to catch the drippings.
4. Grilled Lamb Chops with Garlic and Herbs
at cookingnook.com
Although lamb can be quite strong, this recipe makes them wonderfully mild and delicious. Again, don't mind the name – you can absolutely cook these in a skillet. It doesn't take long to cook lamb, the most you have to do is make sure you give the chops 30 minutes in the fridge, so all the herbs and the garlic can get in there.
5. Vegetable Chicken Stir Fry
at bettycrocker.com
If you're looking for super easy meals to make, you can't go wrong with stir fry. This is one of my favorite recipes – it's simple and delicious. Take 5 minutes to prep, 14 minutes to cook, and you're done! The dish is definitively scrumptious, especially if you take the time to use fresh vegetables. Of course, if you prefer a vegetarian dish, just leave out the chicken. You can also substitute the protein of your choice, just make allowances for the cooking time.
6. Honey Lemon Chicken
at simpleanddelicious.com
Chicken meals are always incredibly easy to make, but it's also easy to make sure they come out delicious. The lemon and honey combo is classic for chicken, and since it cooks fast, this is a breeze. It's simple but full of flavor, and you can't ask for more than that – especially since you'll only need to work on it for 25 minutes total!
7. Pan Seared Pork Chops with Cider Sauce
at kitchendaily.com
Many easy meals to make still provide different layers of flavor, and this is one of them. It's only 25 minutes altogether, but it comes out incredibly delicious. Just plan ahead so that you have all the ingredients, like shallots, cider vinegar, apple cider, and chicken stock.
If you plan for easy meals to make ahead of time, such as by writing out what meals you want to serve that week based on your schedule, cooking is really a breeze. There are different ways to prep easy meals to make, such as by freezing or preparing parts of the meal early, that can really cut down on your cooking time even more. It takes planning, absolutely, but you'll love not having to chop, dice, defrost, and then be stuck to the stove when there are a dozen other things you could be doing. What are some of your favorite easy meals to make? Recipes, stalkers, I need recipes!
