Potato Recipes might not sound the most exciting recipes to make, but don´t write off this versatile vegetable! The humble spud can be turned into a multitude of magnificent dishes; there are so many potato recipes that you could cook them every day and not get bored. 1. Saag Aloo
Whenever I eat out at an Indian restaurant, this is one dish I can´t resist. All those lovely spices turn the potato into an irresistible magic mix. If you´re convinced that spuds are dull, then try this or one of the many Indian potato recipes – you´ll soon change your mind!
Rosti is my favourite potato recipe to cook at home. In fact, it´s so easy that it´s hardly a recipe at all! Rosti is grated potato fried to make a ´cake´. The trick is to squeeze out as much juice as possible before frying – either use a sieve or kitchen paper.
3. Parmesan Scalloped Potatoes
Potatoes and cheese are one of those fabulous combinations in food. This recipe layers slices of potato and onion, and would make a great accompaniment to meat dishes or vegetable stews. If you don´t like Parmesan, try another hard cheese.
Croquettes may be a bit fiddly to make, but the result is worth the effort. Sure, you can buy the ready-made frozen variety, but your own will be tastier and free from additives or preservatives. The bonus is that if you make a big batch you can freeze the rest for later!
5. Potatoes with Tomato Sauce
This kind of potato recipe is popular as a tapas dish in Spanish bars. The potatoes are served in a simple but well-flavoured tomato sauce; if you like a spicy taste then you could increase the chilli powder (but do be careful not to overdo it!).

Potato skins make a great snack or part of a buffet meal, and are wonderful served with dips and sauces. Try them with a tomato salsa and a garlic dip. Or you could include them as part of a main meal.
7. Indian Sausage Parcels
Sometimes it´s hard to judge how much to cook, and you end up with leftover vegetables. If you find yourself having cooked too much potatoes, then use them to make these spicy savoury pastries (there aren´t actually any sausages in them, the name is referring to the shape.
8. Perfect Roast Potatoes
Roast potatoes can be one of those potato recipes you just can´t seem to get right. If success eludes you, then try this version from one of Britain´s best-loved cooks. If it doesn´t work for you, then either try another version or give up!
