When you need a pick-me-up or just a healthy tasty snack, juice blends might be a better choice than a smoothie which can often be heavy going. Some veggie juices are surprisingly tasty so don’t be put off by using them as well as fruit juices. Here’s a few interesting concoctions for you to try. For these you will need a blender and for some a juicer. These recipes are all for one serving.
1. Queen of Green
You will need: 2 carrots, 2 celery sticks, 100g spinach, 100g dark green lettuce (romaine is best), and 25g parsley. Juice the carrots and celery. Put spinach and lettuce and parsley in the blender and add the juices. Whizz with a couple of ice cubes. Serve in a tall glass and garnish with some chopped parsley.
2. Red Revival
You will need: 2 small carrots, 100g beetroot, 1 small orange sweet potato, and 1 small fennel bulb. Juice the ingredients. Mix all juices together. Season and serve in a glass over ice. Garnish with fennel fronds.
3. Chilli Queen
You will need: 2 carrots, ½ small deseeded chili, ½ fresh pineapple (about 7 ½ oz), juice of ½ lime, and 1 tablespoon chopped cilantro. Juice the carrots, pineapple and chili. Pour into a tall glass over ice cubes. Squeeze in the lime juice. Stir in the cilantro and serve.
4. Mango to the Core
You will need: ½ large mango, 2 small apples, 125g peeled cucumber, and ice. Juice the mango, apples and cucumber. Put all 3 juices together in a blender. Add a few ice cubes and blend until slushy. Pour into a glass and serve.
5. Silver Cloud
You will need: ½ lemon, 3 ½ fl oz soya milk, 2 oz ground almonds, 3 ½ oz canned lychees, drained, and 2 ice cubes. Juice the lemon. Put in blender with all other ingredients. Blend until smooth and frothy. Serve in tall glass with some strips of lemon zest.
6. Flushed Away
You will need: 8oz cranberries, ¼ watermelon or ½ Galia melon, and 8oz cucumber. Juice all the ingredients including the melon seeds and cucumber skin. Mix and serve.
7. Hot Stuff
You will need: 2 medium tomatoes, 2 celery sticks, 1 inch roughly chopped fresh root ginger, 1 garlic clove, 1 inch fresh horseradish root, and 2 small carrots. Juice all the ingredients. Blend with 2 ice cubes. Serve and decorate with slivers of celery or celery fronds.
8. Key Lime Pie
You will need: 1 kiwifruit, ½ lime, and 3 ½ fl oz soya milk. Juice the kiwi and lime. Put in a blender with an ice cube and the soya milk and whizz. Serve immediately
Please note I have left revolting wheatgrass juice off the list. If anyone would care to challenge me with an ingredient I’ll happily try and find a blend for it.
