7 Cool Recipes I Enjoy ...

I enjoy cooking and making sweet things is my favorite pastime. I’m always looking for a quick dessert or an easy way to create something that is yummy and fun to make at the same time. Here are 7 cool recipes I enjoy whipping up for my family. Most of them fall into the dessert category, but there is an excellent breakfast idea in here as well!

Two Minute Brownies

Mix 2 heaping spoonfuls of cocoa, 2 eggs, a few spoonfuls of sugar, a pat of butter, and a splash of vanilla extract. This will easily fit into a mug and it will make it easier to eat as well. You can add enough sugar to satisfy your own sweet tooth, but I find this ratio works well. Put the mix in the microwave for 30 seconds and then whisk. Cook for 30 seconds more and whisk again. Perform this cooking and whisking combo for a couple more rounds of 30 seconds each. You can add a spoonful of large curd cottage cheese to the mix before you begin cooking it if you want something that tastes like miniature marshmallows. Be sure to whisk the cottage cheese in well before cooking. Cooking less will make the mix gooey, while cooking it longer will create a drier brownie. It’s up to you!

Spring Basket Cookies

Kids get a kick out of these cookies and they are easy to make. Make a batch of sugar cookie dough and back them according to directions. Take a miniature peanut butter cup and cut it in half; going from top to bottom. Place one half of the mini pb cups on top of each sugar cookie when they have cooled slightly. You don’t want to place the miniature cup on top of a piping hot cookie or you’ll end up with a puddle of chocolate and peanut butter! Use green frosting to make leaves and other bright colors of frosting for little flowers on top of the little peanut butter cup basket you’ve placed on top of the cookie. These are very cute and great for parties.

Ice Cream Sandwich Cake

Do you love ice cream cakes, but don’t always have time or money to purchase one? Here is a quick way to make your own ice cream cake. Buy a box of ice cream sandwiches – or more if you want to make a large cake – and purchase a large enough container of whipped cream to cover the outside of the ‘cake’. Put down a layer of ice cream sandwiches and then spread a thin layer of whipped cream on top of them. Keep layering sandwiches and whipped cream until you get the size of cake you want. Cover the entire cake with whipped cream and decorate how you see fit.

Seven Layer Jell-O

I love making this in a fancy clear dish so all the layers can be seen. You can use any flavor of Jell-O you wish, but the dessert might taste better if the flavors compliment one another. If you’re simply going for aesthetics, then use a rainbow of colors! Making this dessert is a long process, so I make it the night before I’m going to serve it. Add 1 cup of boiling water to the gelatin mix and a half cup of cold water, stir until the powder is dissolved and then pour it into the serving dish. Set the gelatin in the fridge until set and add the next layer of Jell-O; mixing it with the same ratio of hot and cold water as the previous layer. If you want to create a more distinct division between each layer, add 1 cup of boiling water and a half cup of evaporated milk to the gelatin. This will create a creamier flavor and cloudier appearance in the layer.

Caramel Corn Treats with Confetti

Preheat the oven to 300 degrees and place about 7 cups of Trix cereal on a cookie sheet that has sides on it before starting anything else. In a saucepan, combine a third cup of brown sugar, a third cup of butter, and 2 tablespoons of light corn syrup. Stir occasionally and cook this mix until it begins to boil. Once it begins to boil, cook the mix for 4 minutes more and don’t stir it this time. Remove mix from the heat source and add a teaspoon of vanilla and a quarter teaspoon of baking soda. Mix these two ingredients into the sweet buttery mix until it becomes foamy. Pour this sauce over the cereal and stir well. It’s alright if the cereal clumps into random chunks. Bake for 25 minutes and allow treats to cool before serving.

Quick Red Velvet Cake

I fell in love with Red Velvet cake when the mother of a friend of mine made it for my thirteenth birthday. I found a shortcut to this yummy cake that tastes just as fantastic! Using a yellow cake mix, add 5 eggs, a half cup of oil, a cup of buttermilk, 2 tablespoons cocoa, and 2 ounces of red food coloring. Mix everything together and bake according to the directions on the box the cake mix came in. Once the cake has cooled, mix together 8 ounces of cream cheese, a half box of powdered sugar, a half of a stick of butter, and a teaspoon of vanilla. If you don’t want to make the frosting from scratch, then purchase a can of ready-made cream cheese frosting.

Overnight French Toast

Take two 13 x 9 pans and coat with cooking spray. Place as many slices of bread as you can into each pan. I find that 6 fits nicely in each one, when I use a regular size loaf of bread. Mix together 6 eggs, a cup of half-n-half, a half cup of milk, a teaspoon of vanilla extract, a half teaspoon of grated nutmeg, and a quarter teaspoon of salt. Pour half of this mix over the bread in one baking dish and the rest over the bread in the second dish. Allow these pans to set in the fridge overnight. Heat the oven to 350 degrees the next morning and place the baking dishes in the oven for 30 to 40 minutes. For a yummier addition to this recipe, melt 6 tablespoons of butter in a sauce pan and add three-fourths cup of brown sugar and three-fourths cup of chopped up pecans. Spoon a little bit of this buttery mixture over each slice of bread before baking.
