This would be a great recipe to make when carving pumpkins and celebrating Halloween with the kids.

Recipe Ingredients:

• 2 Granny Smith Apples – each apple made 6 rings
• 1/2 Cup All Purpose Flour – plus a little extra for dredging
• 1/2 Cup New Belgium Brewing Company Mighty Arrow Pale Ale Beer
• 1/2 Teaspoon Salt
• 1/4 Cup Fresh Lemon Juice
• 1 Tablespoon Brown Sugar – firmly packed
• Powdered Sugar – for dusting
• Caramel Sauce – for drizzling

Directions:

• Add flour, beer, and salt to a bowl and stir/whisk until the batter is smooth. Let the batter stand, covered at room temperature for 15-20 minutes.
• Peel and core your apples and cut them into 1/4 inch thick rings.
• In another bowl, combine the lemon juice and tablespoon of brown sugar. Place apple slices on cookie sheets and sprinkle mixture on your slices and let sit at room temperature for 10-15 minutes.
• Place 2 - 2 1/2 inches of vegetable oil in a heavy pot or skillet and heat until it reaches 375 degrees F.
• Lightly dust each apple ring with flour before dipping them into the beer batter bowl. Coat well and let the excess batter fall back into the bowl. Using tongs, drop coated apple rings into the hot oil, turning once. They cook really fast. Less than 2 minutes for the entire process. Transfer the rings to cooling racks with paper towels and then sprinkle with powdered sugar and drizzle with caramel sauce before serving.

Recipe Ingredients:

• 3/4 cup all-purpose flour, divided
• 1 1/2 tsp baking powder
• 2/3 cup beer
• 1 egg
• 1 1/2 cups shredded coconut
• 2 dozen raw, tail-on shrimp
• canola or other mild vegetable oil, for frying

Directions:

• In medium bowl, stir together 1/2 cup of the flour, baking powder, beer and egg. Place 1/4 cup flour and coconut in two separate bowls.
• Holding each shrimp by the tail, dredge in flour, them dip in beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes.
• Meanwhile, heat oil to 350F in a heavy pot or deep-fryer. Cook shrimp in batches, without crowding the pot or fryer; cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, transfer shrimp to paper towels to drain.
• Serve warm with your favorite dipping sauce.

Recipe Ingredients:

• 1 3/4 cups all-purpose flour
• 1 teaspoon seasoned salt, such as Lawry’s
• 1 teaspoon baking powder
• 1/2 teaspoon black pepper
• 1 (12-ounce) bottle beer, preferably dark
• 2 large sweet onions, such as Bermuda, Vidalia or Walla Walla, sliced into 1/2 inch thick rounds and separated into rings
• Canola oil for frying

Directions:

• In a medium bowl, combine the flour, seasoned salt, baking powder, and pepper. Slowly add beer. Set aside.
• Place onion rings in a bowl of ice water and let chill for 15 minutes. Remove onion from water and pat dry with paper towels. Recipe Ingredients:

****For sauce:

• 1/2 cup Greek yogurt (can be nonfat)
• 1/2 clove garlic, minced
• 2 tablespoons fresh dill, chopped
• 1 teaspoon lemon juice
• Salt and pepper to taste
• 1-2 tablespoons buttermilk (optional)

For pickles:

• 1 cup all-purpose flour, plus more for dusting
• 1 tablespoon sugar
• 1/8 teaspoon baking soda
• 1/4 teaspoon baking powder
• 1/2 teaspoon kosher salt
• Pinch freshly ground black pepper
• 1/2 cup buttermilk
• 1 cup beer of your choice
• 6 kosher dill spears (the recipe makes plenty of batter to double or triple this)
• Peanut oil, for frying

Directions:

• To make the sauce, combine first four ingredients in a small bowl and season to taste with salt and pepper. If desired, thin it out with buttermilk to your desired consistency.
• To make the batter, whisk together the flour, sugar, baking soda, baking powder, salt and pepper in a medium-sized bowl. Whisk in the beer and buttermilk and stir to combine thoroughly.
• Heat the oil in a large pot or deep fryer to 350 degrees. Pat the pickle spears dry with a paper towel, and sprinkle flour on them. Dunk each spear into the batter to coat and gently drop it into the oil. Cook until the outside is crisp and golden brown (about 2 minutes). Transfer to paper towels to drain, and serve immediately alongside dipping sauce.

Recipe Ingredients:

• 8 corn tortillas
• 1 cup all-purpose flour
• 1 teaspoon sea salt
• 1 teaspoon coarsely ground pepper
• 1 cup beer, room temperature
• Vegetable oil
• 1 pound salmon fillets, cut into pieces
Chipotle Crema
• Garnishes: lime wedges, shredded cabbage, chopped fresh cilantro

Directions:

• Wrap tortillas in foil, and bake at 200° for 10 to 15 minutes or until warm.
• Combine flour and next 3 ingredients in a large, shallow bowl. Let stand 5 minutes.
• Heat 1 inch oil in a 10-inch heavy pot (2 to 3 inches deep) over moderate heat until a deep-fat thermometer registers 360°.
• Dip fish into batter to coat, draining excess. Fry fish in batches, turning once, 4 to 5 minutes or until golden. Drain on paper towels.
• Assemble tacos with warm tortillas, fish, and Chipotle Crema. Garnish, if desired.

Recipe Ingredients:

• 1 box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
• 1/4 cup water
• 1/4 cup vegetable oil
• 1 egg
• 2 cups Gold Medal® all-purpose flour
• 3 teaspoons baking powder
• 1 teaspoon table salt
• 1 bottle (12 oz) dark beer, chilled
• Vegetable oil for deep frying
• 1/2 teaspoon coarse sea salt

Directions:

• Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 8- or 9-inch square pan with shortening or cooking spray. In medium bowl, stir brownie mix, pouch of chocolate syrup, water, 1/4 cup oil and the egg until well blended. Spread batter in pan.
• Bake 8-inch pan 38 to 40 minutes, 9-inch pan 34 to 37 minutes, or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pan on cooling rack, about 1 hour 30 minutes. Cut into 4 rows by 4 rows.
• In 5-quart Dutch oven or heavy saucepan, heat 2 to 3 inches oil to 350°F. In medium bowl, mix flour, baking powder, 1 teaspoon salt and the beer with whisk until smooth. Working in small batches, dip brownies into batter. Fry in hot oil about 2 minutes or until golden brown. Drain on paper towels; sprinkle with sea salt.
