Summer time is definitely here and with the warmer weather comes plenty of time standing around the grill. Most of my family’s meals seem to be cooked out on the grill when we all get together. Chicken seems to be the only meat we call can agree on, which makes the following list of marinades a useful one to have on hand during the summer. Here is a list of 7 marinades for grilled chicken you might like to try.

Pineapple Mustard

If you like a combination of sweet and spicy, then you should give this marinade a try. Combine a half cup of both pineapple juice and soy sauce with a quarter cup of vegetable oil, 2 tablespoons brown sugar, a tablespoon of garlic powder, a quarter teaspoon of black pepper, a teaspoon of dry mustard, and 2 or 3 teaspoons of powdered ginger. Bring this mixture to a boil and simmer for around 5 minutes. Let the chicken set in this marinade for at least an hour and then grill as usual.

Curry and Honey

This marinade is used before and after the chicken has been grilled. Mix up the following ingredients and divide in half; a quarter teaspoon ground ginger root, a teaspoon and a half of curry powder, 2 tablespoons Dijon mustard, a tablespoon of soy sauce, 3 tablespoons of lemon juice, a quarter cup of maple syrup, a cup of Italian dressing, a quarter cup of honey, and 3 cloves of garlic that have been minced. Half of the mixture should be placed in a large zip-lock bag with the chicken over night. After grilling, pour the remaining half of the marinade over the chicken. Use the half that was saved from the day before, not the dribbles leftover from the baggie where the chicken sat over night.

Thyme and Green Onion

In a gallon zip-lock bag, add the following ingredients: a sprinkle of ground black pepper, 2 tablespoons of chopped green onion, a clove of minced garlic, a quartet cup of white wine, 2 tablespoons of lemon juice, 3 tablespoons of oil and of soy sauce, and a half teaspoon of thyme. Add your chicken to this marinade in the bag and let it set for an hour in the fridge. After the hour has passed, grill the chicken like normal.

Ginger and Cumin

I love all the spices included in this marinade. It is an excellent mix that truly wakes up your taste buds! Mix a half teaspoon of chili powder, a teaspoon of both coriander and ground cumin, 3 crushed cloves of garlic, a half cup of peanut oil, and 2 tablespoons of soy sauce, chopped ginger, and dark brown sugar. Let the chicken set in this mixture overnight before grilling.

Peanut Butter and Red Pepper Flakes

I think the peanut butter adds the perfect touch to this rather spicy marinade. In a bowl, stir together a teaspoon of powdered ginger, 3 teaspoons of red pepper flakes, 4 minced cloves of garlic, a quarter cup of both lemon juice and white wine vinegar, an eighth of a cup of soy sauce, a half cup of peanut oil, and a half of cup of peanut butter. Mix everything until smooth and add uncooked chicken. Diced onions can also be added to this mix. Let the chicken set overnight and then grill as usual.

Spicy Bourbon

Add the following ingredients to a blender: 2 teaspoons of powdered garlic and minced onions, 2 tablespoons of fresh ginger, 3 smashed garlic cloves, a tablespoon of molasses, a tablespoon of red pepper flakes, a teaspoon of paprika, a half cup of brown sugar, a cup of bourbon, and a cup of soy sauce. Once it has been well blended, put half of the mixture in a zip-lock bag with the chicken and the other half in the fridge for after grilling. Leave chicken in the mix for 12 hours or overnight.

Coconut Milk and Peanut Butter

I love this combination of flavors, especially with chunks of grilled chicken. In a large bowl combine the following: 4 diced green onions, 2 tablespoons of creamy peanut butter, three-fourths cup of coconut milk, 2 tablespoons of water, a teaspoon of red pepper flakes, a teaspoon of grated fresh ginger, 2 cloves of minced garlic, 2 tablespoons of lime juice, and a third cup of soy sauce. Add the chicken to the mix and place a cover over the bowl. You can also put the chicken and marinade in a large zip-lock bag instead. Le the chicken set for at least 2 hours, but longer if you want it to have more flavor. Grill each piece of marinated chicken as usual.
